Last week one of my girlfriends loaned me her American Diabetes Association Cookbook so that I could pick through it and try out some new recipes with our family. Like I said yesterday, I sat down Friday evening and flipped through it making a plan for our week.
I was totally not expecting the kids to love or even like this first meal I chose. In fact, I thought I would hear much whining and complaining, especially from Little Man who seems to be exercising his independence with food lately. However, I was wrong! The kids devoured this and even asked for seconds, and in my oldest's case, thirds!
We'll see how things go tonight with the pumpkin pasta that is on the menu. I told My Hunter that was on the plan and he didn't seem the least bit thrilled. I have to admit, I am wondering myself how it will taste. I am not much of a pumpkin fan, unless it's in a dessert. ;)
Anyway, I wanted to share last night's recipe with all of you, and of course, I have to save it here for myself since it was such a hit with everyone here.
Makes: 10 servings
Serving Size: 1 cup
Prep Time: 15 minutes
INGREDIENTS:
1 tsp olive oil
1 lb 95% fat-free turkey kielbasa, chopped {I subbed this for venison, because it's what we have here, but I am sure the kielbasa was delicious. I will definitely be trying it in there next time.}
3 medium onions, coarsely chopped
2 medium celery stalks, diced
3 garlic cloves, minced
3 16-ounce cans black beans, rinsed and drained
4 cups water
1 15-ounce can no-salt-added diced tomatoes {I chopped up fresh tomatoes instead.}
1 4-ounce can chopped green chilies
1 tsp ground cumin
2 tsp dried oregano
1 bay leaf
1 green bell pepper, diced
1/2 tsp salt {optional}
1/4 tsp ground black pepper
1 Tbsp chopped fresh cilantro
DIRECTIONS:
Add oil to a large soup pot over high heat. Add kielbasa {or whatever lean meat you choose} and sauté for 4-5 minutes or until beginning to brown.
Stir in onions, celery, and garlic. Saute an additional 5 minutes or until onions turn clear.
Stir in remaining ingredients except cilantro and bring to a boil. Reduce heat and simmer 15 minutes.
Remove bay leaf and stir in cilantro.
Optional Additions: Serve a dollop of fat-free sour cream and a sprig of fresh cilantro on each serving of soup. Add a dinner roll or cheese muffin to make the meal even better. :-)

Let's face it, meals in our house the past week have had to be simple and quick as we are figuring out this whole diabetes thing. A couple nights ago I made the kids mozzarella cheese quesadillas, and I had planned on making some avocado ones for my MIL and I. However, my avocados weren't too ripe. Plan B... I pulled out the basil pesto sauce I had in the fridge, and I have to say, I am glad the avocados weren't ripe! ;) This was pure deliciousness!
BASIL PESTO QUESADILLAS
INGREDIENTS:
Basil pesto sauce
1 small roma tomato, diced
1 green onion, sliced
Salsa
Mozzarella cheese
Whole Wheat Tortillas
Seasonings of choice - We used:
Cumin
Garlic Powder
Paprika
Sea Salt
DIRECTIONS:
With the tortilla flat, spread an even layer of basil pesto sauce over the entire area.
Layer with diced tomato and green onion.
Sprinkle on your seasonings.
Put mozzarella cheese on top of all of this.
Fold the tortilla in half to close.
Spray skillet with cooking spray, and place the quesadilla in the skillet.
Brown on both sides.
Top with salsa if desired.

If you follow me on Facebook, you may have seen me post last week that I have become *obsessed* with Chai tea. It has replaced my daily cup of coffee. Imagine then how excited I was to find a fall Chai Shakeology recipe! Mmm! Had to share! ;)
INGREDIENTS:
1/2 cup brewed unsweetened black chai tea, cooled
1/2 cup water
1/2 cup 100% pure pumpkin puree, canned or fresh
1 scoop Vanilla or Chocolate Shakeology (or 1/2 scoop of each)
1 tsp. raw honey or pure maple syrup
1/4 tsp. ground cinnamon
1 dash ground nutmeg
1/2 tsp. finely chopped ginger
1 cup ice DIRECTIONS:
Place tea, water, pumpkin, Shakeology, honey, cinnamon, nutmeg, ginger, and ice in blender. Cover.
If you have been following me for any amount of time then you know by now that I have quite the sweet tooth. Since I started drinking Shakeology two years ago now, that has helped tremendously. When I came across this recipe about a month ago, I knew I needed to save it to have on hand for when my cravings hit a peak. I adjusted the recipe to fit my tastes, so know that you can do that too. I am guessing this would be amazing with Chocolate Shakeology, so I will be trying that soon.
This hit the spot, and I am not going to lie when I say I went and hid in my room to drink this. My kids usually take sips of my daily drink, but I wasn't allowing that this time. ;)
One thing I have found since starting my healthier lifestyle is that it is so important to eat six small meals everyday, making breakfast your largest meal of the day. Eating smaller meals more often keeps your blood sugar levels steady and your metabolism going. You want to eat breakfast within one hour of waking up. Breakfast is the most important meal of your, so do not skip it!
If you are struggling with weight loss, be sure that you are pairing complex carbs with protein at each of your meals. It could be a reason for not seeing results.
What I eat on a daily basis is pretty simple. I wanted to share it today, because it is a question I get asked. I am pretty repetitive with my eating. That doesn't bother me at all. Once I find something healthy that I love, I tend to stick with it.
BREAKFAST
Before I eat breakfast, I drink one large glass of water. This helps cleanse my body, remove toxins and aid in digestion.
My breakfast is almost always Vanilla Shakeology. If I don't have my Shakeology for breakfast, I will eat oatmeal with cinnamon, fruit, and chia seeds.
SNACK #1
Two to three hours later, I have my first snack. This is usually an apple with one tablespoon of natural peanut butter.
Some other great options:
Baby carrots and celery with two tablespoons of hummus
1/2 cup of plain Greek yogurt with fresh berries, honey, cinnamon, and 1/4 cup slivered almonds
1/2 - 1 cup of grapes with a low-fat string cheese
LUNCH
Again, two to three hours after my mid-morning snack, I will have lunch. This usually is a salad. I will take one chicken breast and put that on my bed of lettuce. I will toss on any veggies I have on hand, carrots, tomatoes, peppers, slivered almonds, and one tablespoon of a low-fat balsamic vinaigrette dressing. I make sure to have another big glass of water with my meal.
Here I have a creamy homemade Greek yogurt dressing.
SNACK #2
I have 12 whole almonds and a cup of fresh fruit, along with a glass of water.
SUPPER
This varies depending on our weekly meal plan, but it usually consists of a protein and veggie. We eat a lot of venison at our house, and if we aren't having that, we are eating chicken or fish. We have sweet potatoes and quinoa or brown rice quite often here.
SNACK #3
If I am still hungry in the evenings, I will have a bag of air-popped popcorn or Greek yogurt with berries, along with a cup of tea.

Hi friends! How has your weekend been? Ours has been gorgeous and eventful with the warm temps and My Hunter getting his first black bear... one that the taxidermist said was about as big as they get here! Proud of him!
Today we are off to church and then I have a meeting with the women's ministry team after. I really need to get home after and get our meal plan done for the week. Remember I stated that I want to get back on track with that? Gotta do it!
Last night I tried out a new crockpot meal. Since I love simple crockpot meals so much, I wanted to share this one. Turns out it was super similar to the BBQ chicken recipe we already make from time to time, but this one had beer in it. We couldn't taste the beer in it at all, but maybe if we tried a different kind next time. I chose Corona because we had a bottle sitting in the fridge that was left over from when we had friends over at Easter.
Ingredients:
{Serves 8-10}
3lbs boneless skinless chicken breast
1 tbsp onion powder
1 tbsp paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
8oz bottle of beer
1 bottle of your favorite {16-18oz} BBQ sauce {We always use Sweet Baby Rays.}
I have to share this Chocolate Shakeology recipe with all my Shakeology drinkers out there! Seriously, this is dessert in a cup... a super healthy dessert! If you try it out, let me know if you love it as much as I do!
I love salads, and I love getting adventurous and creating new ones, with different toppings and flavors! You have to be careful though, because these healthy greens can quickly become unhealthy when you mix extra-large portions of too many toppings. This morning I wanted to share three tips in helping you keep that salad good for you. Grab your bowl of greens and let's toss up a balanced meal for you.
First, you want to pick your protein. Many salads are loaded down with chicken, bacon and cheese, which is just too much extra fat and calories. You just need one protein; that's it. Choose a 3-ounce serving of meat, fish, beans or cheese and place this on your greens. {3-ounces is about the size of a deck of cards.}
Second, add some crunch. Skip the croutons, tortilla strips or noodles and go with peppers, carrots or celery instead to keep it healthy. According to the American Dietetic Association, people who eat a salad-a-day are more likely to meet their important vitamin intake, including immunity-boosting C and E.
Third, add a little fat. Monounsaturated fats help you absorb carotenoids found in veggies like carrots and spinach, which are also super important for eye health. If you want to try something other than the common oils, try out one of these options instead {which are all the fat equivalent to 1-2 tsp oil}:
10 olives
12 almonds
7 walnut halves
1/4 avocado
Some other ways that I like to keep my salads fun and interesting:
Add raspberries and almonds
Squirt with lime juice
Toss in some red onion
Sprinkle on some sunflower seed
Drizzle with blueberry {or another fruit-infused} vinegar

I don't know if you could tell from the picture I posted yesterday of my day one completion post, but that was not a recent picture of me. That was me from back in November when I *tried* to do the 3-Day Shakeology Cleanse. Go back and look hereif you missed yesterday's post. You will see my hair is shorter. I was too lazy too busy to post any other picture yesterday. You see, I have this whole conference event coming up TOMORROW {Please pray for me!} that has consumed my time, so I couldn't justify making a new photo that says the same thing... that I made it through day one.
The thing with back in November when I tried to do this cleanse was that I only made it through day one. I failed after that. On day 2 I started by slowly licking the peanut butter off the knife after making the kids' breakfast, telling myself, "No big deal. It's one little lick." That then led to a small bite of one of their sandwiches. {I am sure you can guess where this is going. :-)} Eventually by the end of the day I was eating everything that I should not have if I wanted to truly do this cleanse right. And, by day three... well, there was no day 3.
This time around, however, I made a promise to myself and My Hunter that I was going to do this 3-day cleanse! He reminded me that I am so strong when I make up my mind to do something, in fact I think his exact words were, "You are seriously the strongest woman I know... when you decide to be." That meant a lot! It got me thinking that, "Yeah... I *can* do this! It's only three days!" I believe that when you truly accept yourself and put your mind fully into your goals, you will achieve them!
That is part of the reason I have been posting this 3-day journey on here. I know that if I share with you guys, you are all now holding me accountable too, and I love that! It keeps me going! Accountability is another huge part in moving towards your goals. I want to succeed because I gave my word that I am going to do this!
So, I am happy to report in to all of you that I completed day two yesterday perfectly! I did it! One more day to go!
Like I said yesterday, I will be sharing a full post {hopefully Monday} on how this went and what my results are, but I have to say I am feeling so amazing! I think God orchestrated this cleanse in line with this conference prep. I am feeling so clear-headed and focused, which as a result makes getting things done much easier.
Okay, now I have to go. More work to get done for the big day tomorrow! I hope you all have an amazing Friday! <3

Happy Sunday! It has been a gorgeous weekend here! We played outside quite a bit of the time. Hope you all have been enjoying your weekend as well.
I laid out our meal plan yesterday and now today, after church, we will run to the store to pick up any needed items and come home to meal prep for the week. I love having this all laid out, with as much of our meals and snacks prepared ahead of time. It makes it so much easier with everything we have going on once the week's activities begin.

I have a new group of challengers starting on the 21 Day Fix tomorrow, so I figured I would join in {my third round} with them. I am absolutely loving the program, the simplicity and results of it all so I figure why not.
When My Hunter is home to work out with me this week, I will join him in whatever Insanity workout he is on, just because I really enjoy working out with him and I am finding that I really like working out with Shaun T. He is TOUGH but totally pushes and motivates you as you go through the workout.
I am planning my May challenge group now, and am looking forward to starting something new. I love variety in my workouts, and it is good to keep your muscles guessing. ;)

Alright, I am not going to lie. I was probably the biggest skeptic when I first heard about Shakeology. I have never been a believer of fad diets, trends or things that seem too good to be true. And when I heard about Shakeology, those were the first things I thought.

I am on the final week of my round 2 plan with 21 Day Fix! This week includes a 3 Day Quick Fix, which I will be sharing more about in a post coming up in the next day or two.

This will help rev metabolism, burn more calories, and just get you closer to reaching your goal. I do plan to do both workouts each day this week.

How was your weekend? Ours was pretty marvelous! We had our normal Friday night movie night, a relaxing Saturday, and yesterday involved some meal prep on my part while My Hunter took the girls out to enjoy the gorgeous 60 degree weather we were having.
In honor of St. Pat's Day today, I thought I would share a couple of green recipes with all of you; both involve avocado.
The first one is our guacamole recipe. I didn't have it added in when I took this picture, but we threw in some of my mom's homemade salsa with and it makes it that much better! Try it!
Guacamole Dip Ingredients:
2 ripe Avocados, peeled and pitted (I ended up using 5 avocados and just added more of everything else.) Juice of 1 Lime 1/4 Cup minced Red Onion (Probably my favorite ingredient, and to think I was going to leave it out! I am famous for that, if I don't have something, I am kinda like, uh, oh well, it'll be fine w/o it! Drives MH NUTS!) 2 Tablespoons minced Cilantro 1 small clove Garlic, minced 1 teaspoon Kosher Salt or 1/2 teaspoon Table Salt 1/2 teaspoon Pepper 1 Tablespoon minced Jalapeño
Directions:
Halve the avocado and remove the pit. Remove the avocado from the skin by scooping it out with a spoon. Place the avocado in a bowl and mash it gently with a fork. Mix in the remaining ingredients.
Serve immediately. The recipe also says you can cover and chill for up to 3 hours, but I would just leave everything prepared and put it together in the last minute.
Makes 3-4 servings, but it will go so fast you should double it!.
This second recipe is for all you egg salad lovers. Adding avocado to it not only has some health benefits, but it makes it that much tastier!
8 large hard-boiled eggs (You will use 4 whole and then 4 of the whites only.)
1 medium avocado
1 tbsp light mayo
1 tbsp Greek yogurt (You can use plain, and that's actually what her recipe called for, but we only had greek here, so I used it.)
Celery
1/2 tsp salt
dash of pepper (We love pepper, so I put more on.)
Directions:
Chop up your 4 eggs and 4 egg whites.
Cut your avocado into small pieces.
Slice up your celery stalks.
Combine all ingredients. Add more salt and pepper as needed.
Serves: 6
Serving Size: 1/2 cup

I have gotten back in to a regular routine of planning and prepping my meal plans {and hello!} it just makes life so much easier! I need to stop falling off that wagon. ;)
I am in the midst of prepping now, but I wanted to take a quick break to pop over and share what I have planned for eats this week.
You will see that I am a pretty repetitive person. It works for me. I cook up a bunch of a few things and just re-eat them all week.
For those who are not aware, I am on round two of the 21-Day Fix, so that is why all my food groups are color-coded.
